Pawlet is named for the small town in Vermont’s Mettawee Valley where the Leach family has farmed for 7 generations. Chartered in 1761 as part of the New Hampshire Grants, Pawlet expanded after the Revolutionary War, when soldiers who had noted its agricultural promise on their way to halt Burgoyne’s march from Canada returned with their families to farm what the Narragansett called the “valley of black earth.” Pawlet the cheese reflects that rich agricultural history, made with milk from our Registered Holstein herd that is born, fed, pastured, and milked right here at home. The result tastes like our valley—rich, grassy, earthy, and beautiful.
